The estate
On our farm, we show our gratitude to the land and celebrate our thriving, fertile hills.
We always listen to nature so that we can show the true worth of a product with ancient roots that encapsulates the fragrances, aromas and colours of the local area.
We think of the future and strive to protect the environment by combining certified PDO Veneto and organic olive growing with innovative processing techniques.
Hence the name: Tenuta Le Schiave is a reference to medieval vine-tying techniques. It underlines our bond with the land and the way we embrace both the past and innovation.
The oil mill
Olive processing is an art that begins with the harvest and continues in the oil mill.
There, a special blend of the master miller’s expertise and cutting-edge technology helps to enhance all of the specific qualities of the olives and ensures that all of the extra virgin oil’s aromatic and phenolic properties remain intact.
We have our own Certified PDO Veneto and organic oil mill, for optimum processing of our select raw materials.
Healthy and packed with nutritional properties that promote well-being, the olives are put through a painstaking extraction procedure in which the emphasis is on the quality of the oil, rather than the quantity.
